Rice flour Roti

Ingredients:

Rice flour 2 Cups
Finely cut onions 2 Tbl Spn
Fresh coconut 2 Tbl Spn
Crushed ground nuts and roasted gram 1 Tbl Spn
Chopped green chillies 2 Tsp
Salt and Oil As required

Method:

In a broad vessel put rice flour, salt, finely cut onions, fresh coconut, crushed nuts and 1 tbl spn oil and mix well. In a vessel boil one cup of water. Mix the flour with that hot water. When it becomes cool, knead the flour with your hands. If necessary sprinkle little water and make it into stiff dough. Make it into medium size balls. Take a plythene paper. Greese it with oil . Keep one ball and make roti with your fingers. Keep a roti pan on stove. Put this roti on the pan. Put oil on the top and sides. Close it with a lid. Keep it in medium flame. After some time take the lid and turn the roti and add little water and fry it. Like that prepare all roties. Eat this when it is hot. Garlic chutney goes well with this roti.

Rawa Roti

Ingredients:

Bombay Rawa 2 Cups
Water 2 Cups
Sour Curd 2 Tbl Spn
Finely cut onions 2 Tbl Spn
Chopped green chillies 4
Finely cut curry leaves 1/2 Tbl Spn
Salt and Oil as required

For Seasoning:
Mustard and Broken uraddal little

Method:

Keep a kadai in stove. Pour little oil and put mustard . Then allow it to crackle and add broken urad dal. Then put chopped chillies, onions and curry leaves. Allow for a minute. Add 2 cups of water. When it boils add salt and rawa. Keep it in low flame. Mix well. When it comes into dough consistency remove it from fire add sour curd and mix well. Allow it to cool. Then make the dough into balls. In a wet cloth keep one ball and press it with your fingers and amke a roti. Like that prepare one by one. Keep a roti pan in stove and fry one by one. Directly take from wet cloth and put it on the pan. Add oil and fry it. Coconut chutney goes well with these roties.

Pudina (Mint) Roti

Ingredients:

Maida 2 Cups
Pudina leaves 2 Tbl Spn
Green chillies 4
Salt As required
Oil As required
Ghee 2 Tsp

Method:

Take maida in a broad bowl. Add salt and ghee and mix well. Chop chilles. Cut pudina leaves finely. Add to maida and mix well. Then add water and mix it. Keep that dough aside for one hour. Make it into lemon size balls and prepare roties with the help of roti maker or with roller. Fry the roties one bye one in pan adding little oil. Keep the stove in medium flame. Always put the roti on pan allow it to fry for half minute then turn it and then add oil and fry it. You will get good soft roties.
